Garlic Parsley Knots

Bread Challenge Week 52

For the last week of the bread challenge I made Garlic Parsley Knots from Healthy Bread in Five Minutes a Day. I’ve mentioned that I love this book right? Well, just in case you missed it, I love Healthy Bread in Five Minutes a Day. Healthy recipes, a variety of varieties and interesting ingredients all in one place.

The recipe says it make 5 garlic knots using about a quarter of the master recipe dough. I decided to just use all of the dough I had made following the master recipe and make 20 knots. I love that the recipe calls for minced garlic, parsley and olive oil to top the bread. I also love that the bread has a whole lot of whole wheat flour.

Because Healthy Bread in Five Minutes a Day requires no kneading the rise times are longer. About two hours. All in all this recipe took about 3 hours and 15 minutes or so with about 2 and half hours going to rising the dough, 20 minutes to bake and 25 or 30 minutes of hands on time.

I made these knots to go along with a family pizza night. The knots that we did not finish are in the freezer. I love having rolls and bread in the freezer for easy additions to meals. The master recipe used for the garlic knots is very versatile. The garlic knot recipe itself is, in my mind, mostly a bread to go with meals. I could see having bite sized knots at a party. The knots are not suitable for sandwiches because of the garlic, parsley and oil on top.

Will I make them again? The knots are much larger than I had anticipated and one knot really is too much for one person. I do think we will make these again but I plan to make the knots much much smaller and tone down the garlic in the recipe. I love garlic but I think the garlic flavor is just a bit overpowering. I love that I can use the master recipe to make a loaf of bread, some garlic knots and more all from making hearty healthy dough once. I love Healthy Bread in five Minutes a Day.
