This recipe for Lime Grilled Chicken is from Rachael Ray’s 2,4,6,8 Great Meals For Couples or Crowds cookbook. I suggest reserving some of the marinade to top the chicken after cooking. The home fries are delicious on their own but also taste great with ketchup.
Lime Grilled Chicken
ingredients
1/2 cup fresh cilantro
Zest and juice of 2 limes
2 large garlic cloves
1 jalapeno, seeds removed
1/4 cup olive oil
1 tablespoon cumin
salt and pepper to taste
4 boneless skinless chicken breasts
In a blender or food processor, combine the cilantro, lime zest and juice, olive oil, garlic, jalapeno, cumin, salt and pepper. Puree until smooth. Place uncooked chicken breasts in shallow pan to marinate. Pour roughly 2/3 of the lime mixture over top, reserving the remaining 1/3 to top the chicken after grilling. Marinate chicken for at least 10 minutes or up to a day.
Preheat grill. Char the chicken on both sides and make sure to cook thoroughly (to an internal temperature of 160 degrees).
Chili Home Fries
ingredients
1 pound gold potatoes
2 tablespoons olive oil
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon allspice
1/2 teaspoon coriander
salt and pepper to taste
Preheat oven to 400 degrees. Slice potatoes into wedges. In a lidded food container mix the olive oil, chili powder, garlic powder, allspice, paprika, coriander salt and pepper. Add potatoes and cover bowl with lid. Shake the mixture until all potatoes are coated with mixture. Place coated potatoes on baking sheet and roast for about 20 minutes until crisp, turning occasionally.
