I have one of those kids who would be happy to open her lunch box and find a peanut butter and jelly sandwich every day. Every day. I don’t send a peanut butter and jelly sandwich every day for a few reasons:
1. I would get board packing the same thing over and over and over. It would take the fun out of lunch packing for me. There lots of fun lunch ideas for kids and it would get old to make the same thing.
2. I would like for her to expand her pallet and continue to eat a wide variety.
Believe it or not peanut butter and jelly- while pretty darn easy- is not always the easiest option to pack Madeline’s lunches.
Sometimes I do decide to take two slices of bread- usually my go to honey whole wheat sandwich bread– and slather it with natural peanut butter and homemade jam. So the PB&J sandwich is not the most exciting thing in this lunch box. You what is? That perfectly sized muffin. On a whim I used the muffin tin I bought from Ikea instead of the standard sized muffin tines I usually use and the result was so exciting I couldn’t help but share it on Instagram. Muffins perfectly sized for our Laptop Lunch Box (affiliate). Now I have one more easy and healthy option waiting for me in the freezer when filling Madeline’s lunch box each day. Yippee!

-PB&J made with natural peanut butter and peach jam
-Plain yogurt with diced mango
-Homemade trail mix with almonds, peanuts, sunflower seeds, dried cranberries and raisins
-Spiced zucchini carrot muffin
