Today’s recipe comes from a cooking class I took recently. This recipe for Ginger beer is actually non-alcoholic, and results in a drink similar to apple cider. It was delicious and refreshing served cold but it would also be great served warm. The spiced flavor of this drink would be a great addition to your upcoming holiday gatherings and would lend itself to be mixed well with rum for adults. The recipe below makes about 18 eight ounce servings.
Ingredients
1 1/2 cups lime juice (equals about 12 fresh limes)
3 cups orange juice
12 cups water
6 three inch pieces of fresh ginger root
12 whole cloves
12 black cardamom pods
1 1/2 cups sugar
Combine ingredients in large sauce pan and bring to a boil. Pour contents of pan into a large bowl, jug or drink container to cool. Cover and refrigerate for at least 2 hours or up to a day. Strain just before serving.
