Okay so I have a sweet tooth, and there are times when I just need a yummy baked good. In order to not end up with 6 dozen cookies or a full pan of brownies I have been playing around with the idea of small batches and I love it. 2 or 3 brownies is perfect to satisfy my craving and when Luke only eats one of them it’s not as bad if I end up eating the rest because the rest is not 17 brownies it is 1 or 2. Yum.
Small Batch Brownies
This recipe makes 2 or 3 individual sized brownies. I use a 5×3 inch mini loaf pan, but I think a muffin tin could work as well.
2 tablespoons unsalted butter, melted
1 oz unsweetened chocolate chopped, (about 3 tablespoons)
1/4 cup sugar
1 tablespoon plus 2 teaspoons beaten egg or egg substitute
1/4 teaspoon vanilla extract
3 tablespoons flour
1/8 teaspoon salt
3 tablespoons cup chopped nuts such as walnuts or pecans
Heat oven to 350 degrees F. Grease a mini loaf pan, about 5×3 inches in size.
Melt chocolate and butter together. This can be done by either using a double boiler or by microwaving the chocolate and butter together on medium heat for about 45 seconds to 1 minute in a microwave safe bowl. Add the sugar, egg and vanilla to the melted chocolate and mix well. Mix in the flour and salt. Fold in the nuts and pour batter into greased pan.
Bake brownies for 25-27 minutes or until the edges of the brownies start to pull away from the sides of the pan a bit.

This sounds great! Although wish the recipe would have called for cocoa powder vs having to melt chocolate.
These are great! Just made them and my boyfriend and I loved them. This recipe is a keeper! The only change I made was using chocolate chips (because that’s all I had), so I cut down on the sugar by half. Thanks for sharing!
I subbed 3TBS cocoa powder and 1TBS vegetable shortening for the chocolate and melted it together with the butter in the microwave and it worked just like chocolate!
