Hummus is one of the best, dips, condiments, party foods ever. It is quick, easy and inexpensive to make and adds so much flavor to your meal or snack.
Hummus is my favorite thing to eat with crackers and veggies, which probably seems fairly obvious. Hummus is just a dip right? Wrong. Hummus is also my favorite sandwich condiment. Move over fatty mayo, Catherine’s got a new lover in town and it’s packed with fiber, flavor and a creamy texture that makes her sandwiches divine.
The very best things about hummus in general is the bazillion different flavors and types you can make just by using a few different ingredients. Don’t worry I’ll be sharing more of my favorite hummus recipes with you because honestly hummus is my go to snack right now. Homemade crackers, sliced veggies and hummus are delicious, but for today go forth and enjoy some Roasted Red Pepper Hummus.
Roasted Red Pepper Hummus Ingredients
1 (15 oz) can chick peas
1 garlic clove
juice of half a lemon
3 whole roasted red peppers
1/4 cup Olive Oil
salt to taste
In a blender or food processor, blend the chick peas, garlic, lemon juice, roasted red peppers, and olive oil until the ingredients form a creamy, paste-like consistency. Salt to taste and serve with whole wheat crackers, pita chips, or veggies.
Recipe will keep in the fridge in a air-tight container for about 5-7days.

Looks amazing. I love the roasted red pepper hummus from Trader Joes, I'll bet this is better!
Glad you posted this. I am a lover of hummus as well but have never made my own because i always think I need to use Tahini. Mr B is allergic to sesame so its not something we keep in the house. I have tasted your hummus before and it is awesome so I will be making this for sure.
OK. You've inspired. We love us some hummus over here, and would you believe I've never actually MADE it. I thought it would be hard for some odd reason…but I can DO IT 🙂

Do you freeze it? How long will it keep?
I have never tried freezing it. This recipe makes about 1 cup of hummus. It should last for 5-7 days in an air-tight container in the refrigerator. It might last longer but we always eat our pretty fast so I haven't had the chance to test it out. 🙂
