I am on a serious sun dried tomato kick. Actually I’m on a basil kick too. Sun dried tomato and basil, ooooh yeah. This hummus has major flavor, crackers, pita chips, veggies, sandwiches, eaten straight off a spoon, you name it and it will be delicious.
Sun-Dried Tomato Basil Hummus Ingredients
1 can chick peas
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
1 clove garlic
1/4 cup olive oil
1/3 cup sun dried tomatoes
5 basil leaves
1/4-1/3 cup water (as needed)
In a blender or food processor, blend the chick peas, garlic, lemon juice, sun dried tomatoes, basil and olive oil until the ingredients form a creamy, paste-like consistency. Mix in water as needed to thin out to desired consistency. Salt and pepper to taste. Serve with whole wheat crackers, pita chips, or veggies.
Recipe will keep in the fridge in a air-tight container for about 5-7days.
