Kid-Friendly Lunch: Almond Butter and Apple Rice Cake

I remember loving rice cakes as a kid. Slathered in peanut butter of course. Somewhere along the way though, I kind of forgot about them. Until recently that is. While wondering local health food store the shelves of rice cakes caught my eye. Now Maddy and I are enjoying our brown rice cakes together.
