One of my mottos is “when in doubt, peanut butter.” Okay, not really, but it could be. Peanut butter is a universally loved food in this house. No matter the meal it is loved. Dinner? Thai Peanut Chicken. Breakfast? Peanut Butter Pancakes. Snack? Nutty Peanut Butter Chocolate Granola Bar. Treats? How about a nice little batch of Small Batch Peanut Butter Pecan Cookies. I feel like I just went off on a tangent. What was I saying again? Oh yes, we like peanut butter. And for this reason I have many lunch ideas using peanut butter.
This is why peanut growers, peanut butter producers and the grocery store all love me. I probably keep them all in business with my peanut butter purchases. On a side note we also go through a lot of bananas.
The point is it is fairly safe to say, Madeline will come home with an empty lunch box on days when peanut butter is the star or at least the back-up singer in her lunch. Sometimes I push the lunch time envelope and pack Madeline’s lunch with things she might not love in an effort to get her to rethink things and step outside of her lunch comfort zone a little. Sometimes I lean on the things I know she loves and just try to serve it up in new ways. Peanut butter and jelly-dilla’s, or peanut butter dipping lunch or this this case a yummy peanut butter and banana combo.

- A whole wheat tortilla spread with natural creamy peanut butter rolled around a banana
- Raspberries
