Some people would think making a pizza in the morning before school to go in a school lunch is too much work. I am not one of those people. For one I am a pizza lover. I think I will always be an eight-year-old at heart and love pizza more than any other food. I’ve grown up and love a wider variety of toppings but just as when I was a third grader to me pizza will always be tops. This makes me especially popular Madeline because of course she loves pizza too. If you are envisioning me making dough from scratch in the wee hours of the morning you are overestimating my morning motivation. Homemade whole wheat pizza dough is a Friday night ritual in our house but making pizza for lunch is usually an easier more time, labor, and energy friendly prospect than the 100% homemade route.
Flatbread is one way to turn pizza into an easy thing to pack for lunch. When Flatout Flatbread contacted me and asked if I’d please hang out in my kitchen and play around with Flatout breads and Starkist tuna and make a delicious Bullseye meal creation to share with you the school lunch packing fun was totally obvious to me. Tuna is a great protein and Flatout flatbreads are a lovely alternative to sliced breads and pitas. We all know if your packing – and more importantly it you are eating – a packed lunch everyday it’s important to keep things fresh, and different and not fall into a big old rut. Using something like flatbread and turning it into a pesto tuna pizza is a very fast way to make lunch.
