Luke is sort of a granola addict.
He likes to take a container of non-fat plain Greek yogurt in his lunch box everyday. But that yogurt s never ever eaten plain. A small container of granola always makes its way into is lunch box too.
If I’m honest yogurt and granola is one of my daily snacks too. Also, you guessed it, Maddy sure does love a good bowl of yogurt with granola. In fact just about everyday after her nap she makes her way down the stairs and the first thing she says to me is usually “Mommy can I have some yogurt and crunchy cereal.”
So it’s pretty obvious that we go through a lot of granola in the Evolving Mommy household and not just in bar form. Good granola can get pretty expensive so to save my wallet the pain of stocking up on store bought granola I’ve been making my own. The awesome thing about making your own granola that is is supremely easy and pretty darn quick. Lets not forget about the big time savings.
The large container of almond granola in my cupboard means Luke is in heaven and subsequently eating bowls of granola and milk before bed along with his daily yogurt and granola snack.
Almond Granola Ingredients
1 tablespoon coconut oil (or butter)
2 teaspoons vanilla
1 teaspoon salt
1/2 cup honey
1 1/4 cup sliced almonds
1/2 cup flax seeds
1/4 cup sunflower seeds
5 cups oats
Preheat oven to 300 degrees Fahrenheit.
Warm coconut oil, vanilla, salt and honey in a large pan. Once mixture has thinned and is warmed mix in remaining ingredients. Mix ingredients until everything is evenly coated in the honey mixture.
Pour granola onto 2 baking sheets. Spread granola evenly over sheets. Bake for 12-15 minutes or until lightly golden in color. Remove from oven and let cool. Store in an airtight container.

You are indeed the granola queen 🙂 I wish we ate this healthy at our house 🙂
We have our moments of healthy eating and out moments of junk food extravaganzas. Luckily Luke helps keep me on the straight and narrow otherwise there would be a lot more brownies and doughnuts on these hips of mine.
Having a hubby who didn’t enjoy sweets would sure help me too. I think Nate is worse than me!
