We’re in the middle of a birthday party kind of weekend. My apparently very popular daughter was invited to four parties all taking place this weekend. Two of which were at the same time. The invites came in one by one and before we knew it we were booked solid.
I know a lot of moms have trouble getting dinner on the table on weeknights, but it’s the weekends that get me. Making a homemade dinner on Monday? No problem. Tuesday? Simple. Wednesday? Done. You get the point. Saturday and Sunday are another story. With all the running around, errands, and events I struggle to resist the urge to eat out or get take out.
Today I decided to fight my urge to eat out on a Saturday night early on and threw dinner in the crock pot. At this very moment I have Spiced Cranberry Pineapple Pork Roast cooking in a crock pot on my counter. Now when we are out and about this afternoon we’ll have no excuse not to eat at home. Crock Pot cooking saves money and most likely a ton of unwanted restaurant calories too.
