I try to make it a goal to do two things with Kid friendly lunches. The first goal is to make lunches that Maddy will eat and enjoy. The second goal is try to feed Maddy a lunch that would be happy to eat.
In my opinion kid friendly doesn’t mean bland, flavorless and typical. Kid food doesn’t have to be the same four things you see on every kids menu in every restaurant you visit. Macaroni and cheese, corn dogs, pizza and chicken nuggets while okay sometimes are not all that healthy, flavorful or good really. Yes Maddy is a kid and yes she eats those things sometimes but I want her to know what good food tastes like. I want her to like fresh and flavorful food. The only way for her to get to the point where she orders something like grilled eggplant, mussels, or butternut squash risotto over chicken nuggets is to lead her there.
The occupants of the Evolving Mommy household love goat cheese. Actually we love cheese in general, but even the mention of goat cheese gets enthusiastic cheers from Maddy. Usually some jumping and clapping too. Couple goat cheese with anything and it’s an easy sell but couple turkey, tomato and spinach on multi-grain bread with goat cheese? This sandwich didn’t stand a chance against my little girl. She annihilated this plate full of food. I love that.

- Turkey and goat cheese sandwich with spinach and tomato on multi-grain bread.
- Apple chunks and red grapes
