Bread Challenge Week 50
I have made lots of drop biscuits in my time. Is it possible to eat clam chowder without garlic cheddar biscuits? Not in this house. Even with all the drop biscuits that have come out of my oven I have never rolled biscuits. Until now.
I think that biscuits and gravy and fried chicken held me back from making rolled biscuits. That’s the only way you eat rolled biscuits right? Well, no not really, but I guess lots of foods experience typecasting. Like Meg Ryan. I decided to just jump in and see what happened. I didn’t want biscuits and gravy. I didn’t want fried chicken. So my sous chef and I set to work making biscuits from Joy of Cooking. While we were cutting in butter and rolling out the dough I was trying to come up with something to make. The answer? Bacon, egg and biscuit sandwiches.
I used a smaller biscuit cutter to cut out our biscuits resulting in adorable little biscuits. I love the size of them. Perfect size for everyone to have their perfect sized dinner. 1, 2 ,3, whatever. The biscuits were so fast to make and bake. 30 or 35 minute tops from ingredients to fresh baked biscuits. These biscuits came out flaky, buttery and with the perfect balance of crisp outside and soft inside. We all loved these biscuits. We all loved these breakfast sandwiches.
With the amount of time it took to make homemade biscuits and with the happy feedback from my little family I’ll be making biscuits again. This recipe was good but I am hoping to add some healthier ingredients in future biscuits.
