Bread Challenge Week 51
Coconut seems to be one of those foods people either love or hate. I’m in the love camp. Luke is in the love camp and rounding out our perfect union is a sweet girl who is also in the love camp. This fact makes me happy. Coconutty Granola Rounds? Yes please! 7 Layer Magic Cookie Bars? Mmm Hmmm. A loaf of bread focused on coconut? Why the heck not!
This weeks recipe was found at CookingBread.com. This Coconut bread recipe stood out to me because it’s a yeast bread and not a quick bread. I like quick breads but I was looking for something a bit more bread like. You know what I mean?
The recipe is easy to follow and well written. The recipe is made using normal household ingredients too. This loaf of bread took around 4 hours start to finish with about 3 hours of that going towards rising the dough. I think the dough would have risen faster for me if some of the conditions in my house were more suitable, i.e a little warmer.
this bread smells great while cooking and comes out soft and fluffy. The directions were to roll the dough into 16 balls to form almost a pull apart kind of loaf similar to monkey bread but not sticky. I like this idea for brunch but for a regular loaf of bread it made it less suitable for cutting into slices. I cheated a bit and added about an extra tablespoon coconut to the topping because I wanted extra coconut flavor.
We all really liked this bread, especially still warm from baking. It’s a definite sign that we like it when more than 1/2 of a loaf disappears before the bread is even cold. I see myself making this again in the future with some tweaks. I would love even a little bit more coconut flavor in the bread, more of a whole wheat consistency among other things. Coconut bread gets 3 thumbs up from the Evolving Mommy Household.
