Bread Challenge Week 40
Apples have been on sale lately and I have been taking advantage of it. Probably too much because we have bags of apples all over our refrigerator and kitchen counters. So in my search for a recipe this week I decided something with apple was in order. I came across a recipe on King Arthur’s site and knew I had to make it. It looked like a lovely mix between cinnamon rolls and apple bread. Oh baby, apples and cinnamon and bread what could be better?
Turns out, nothing. I made this bread for a little get together with my girlfriends. I begged them to let me bake for them and they obliged me. I’m a lucky they let me cook for them, this I know. After eating Apple-Cinnamon Twist Bread though I think they are counting themselves lucky too and I don’t think it’s just because I brought them flowers either.

This recipe made 2 large loaves seriously pretty twisted bread with the apple and cinnamon filling peeking out of the twists. It was a hit. The cinnamon perfect. The sweetness was not overly sweet and the apples gave just the right amount of fresh flavor. Start to finish it took about 3 hours and 45 minutes to create these beauties and it was a little labor intensive at times. After all you have to mix and knead the dough. Let the dough rise. Roll out the dough. Mix the filling. Roll up the dough into two rolls. Cut the rolls and twist the cut rolls into loaves. Then let the dough rise again before baking. After baking and cooling the glazing is added to the top.
The challenge in making this bread comes from cutting the rolled dough, filled with apple filling, in half and twisting those now open halves together to make sort of an open faced loaf. It could have required twice the work and I would still make this bread again. Next time, you guessed it, I’m going to play around and use whole wheat flour of at least half of the flour. I think I might cut back on some of the sugar as well. But there will be a next time. Definitely. Maybe I will try the roll variation included in the recipe.
I would recommend making this for your next brunch, party or even just for desert. I suggest making the dough and getting the bread fully ready and to the last rising and then putting the whole thing in the refrigerator for the night. The following morning just pull the bread out of the refrigerator, let it rise for a bit and then bake it off for a yummy morning treat perfect to go with your coffee. Or Tea. Or Cider. Oh that looks SO good! It does look a bit tricky and time consuming though.
It did take a good chunk of time but the majority of it is not hands on time. It is worth the effort for sure.
This looks delicious just don’t tell me how many calories are in it!
