Bread Challenge Week 48
On Sunday morning Maddy did her normal stomp/run through the house to our bedroom. The good thing about the stomp/run is that she does’t sneak up on us. The bad thing is that we know our impending fate before it gets to us. We know it’s time to get up and get the day started even before she makes it to our bed side. So on Sunday morning I found myself laying there thinking about baked goods in the seconds my sweet girl clomped her way through the house to alert us that the sun was up. I’m not sure I should admit this but I think about k goods often. This is probably obvious since I just admitted to thinking of bread and party in the first few seconds of consciousness after waking.
The baked goods in question? Popovers. There are several reasons why popovers where on my mind. I wanted to make breakfast but knew an easy eggs and toast was out of the question because we had used up the last of the bread the day before. Popvers had been on my “to make” list since starting the bread challenge almost a year ago. Lastly, not only did I want some form of breakfast appropriate bread to go with my meal, I wanted an easy and quick bread to go with my meal. Popovers seemd the answer to these challenges.
Betty Crocker Baking for Today was the source of my popover recipe. I like the Baking For Today cookbook because it is full of classic Betty Crocker recipes. Recipes that are time tested. The ingredients list for popovers is deliciously short and uncomplicated. Eggs, flour, milk and salt. From idea to to fresh popovers out of the oven took me about 50 minutes. With 5 ot 10 minutes of that going towards dragging myself out of bed and getting my eyes to focus. I was supposed to use a popover pan, but have done my best to avoid buying specialty pans for recipes I have never tried before. A muffin tin worked just fine even though a popver pan would probably result in higher puffs.
So these popevers were fast and simple, but were they good? Even without the popover pan these little lovelies puffed up leaving a wonderful cavetiy inside to fill with butter and jam. The outsides were nice and golden brown with just the slightest hint of cripness to the outer layer. Crisy, chewy, delicious. Popovers got big thumbs up from the whole family and we will definitely be having then again. Especially since the leftover popovers froze and thawed well too.
