I know that your thinking…”Oh boy! Another pumpkin recipe. This is the best week ever!” And you are right, 5 days of pumpkins is just plain good!
Pumpkin Bread
This recipe is always a hit. The recipe makes two 9×5 inch loaves of pumpkin bread. I usually put chocolate chips in one of the loaves, if you do decide to only put chocolate chips in one loaf I reccomend only using 1/2 cup chocolate chips. Just pour half the batter into one loaf pan and then mix the chips into the remaining portion before pouring it into the batter.
1 cup sugar
1/3 cup vegetable oil
4 eggs
1 cup apple sauce
2 cups pureed pumpkin
1 1/2 cups whole wheat flour
1 1/2 cups unbleached all purpose flour
1/4 cup flaxseed meal
2 teaspoons salt
2 teaspoons baking soda
1 teaspoon baking soda
1 teaspoon nutmeg
1 teaspoon allspice
1 1/2 teaspoons cinnamon
1/2 teaspoon cloves
1 cup semi-sweet chocolate chips(optional)
Preheat oven to 350 degrees. Butter two 9×5 loaf pans. Stir together apple sauce, oil, eggs, pumpkin puree and water. Combine dry ingredients in a seperate bowl. Blend dry ingredients and wet ingredients together. If using chocolate chips add them now. Divide batter between the two loaf pans. Bake for 30-40 minutes or until cake tester comes out clean. After removing from the oven let stand 10 minutes. Remove from baking pans and let cool.
