Day two of “pumpkin fest” 😉 and its pumpkin-mania around here. It really is pumpkin mania around my house, if you don’t believe me just ask Stinky. He’ll tell you that he has eaten and taken pictures of pumpkin in some form 5 times in the couple of weeks. So without further ado here is Tuesdays pumpkin recipe.
Spicy Pumpkin Sauce
This recipe is a quick and easy way to jazz up your dinner. We had this sauce on white fish, talapia to be exact, but it would be yummy on a different white fish or chicken. It would also be easy to make changes to the ingredients to change the flavor too.
Ingredients
about 2 teaspoons olive oil
1/2 cup coarsely chopped onion
1 garlic clove finely diced
1/2 cup chopped fresh tomato
1 tablespoon diced jalapeno pepper
1/2 cup pureed pumpkin
1/2 cup chicken stock
1/2 tablespoon butter (just eyeball it)
Salt and pepper to taste
Add olive oil to saute pan and warm over medium heat. Saute onions and garlic until translucent and fragrant. Add chopped tomato and jalapenos and saute for 2 minutes or until soft. Add pumpkin puree, chicken stock and butter. Saute until warmed through. Salt and pepper to taste.
The above recipe with produce a thicker sauce, you can add more of less chicken stock to gain the consistency you want. some easy substitutions might be fresh basil, oregano or sage in place of the jalapeno.
