Bread Challenge Week 29
Bagels with just the right amount of chewy texture are a rare find in the Evolving Mommy household. Generally we have bagels of the store bought variety. Who has time, energy or the organizational skills to think ahead and make a special trip to a bagel shop for fresh bagels. Not me. Store bought bagels are fine but they tend to lack the slightly crisp crust and chewy inside of a good bagel.
Cinnamon-raisin or blueberry bagels are Luke and Maddy’s preferred flavors so I looked for a cinnamon raisin recipe and came across Eating Well’s recipe. A bagel recipe with whole wheat flour, yes please.
Bagels are a little more labor intensive than your average bread because they require shaping and then the first step of cooking is boiling each bagel before moving it to a baking sheet and baking. Even with that extra labor bagels take less time to make that most loaves of yeast bread. About 45-60 minutes of hands on time and about an hour and a half start to finish.
Holy moly cinnamon-raisin anything baking smells divine but the scent of these bagels cooking and cooling was something special. The recipe made 12 3-4 inch bagels.
We have been eating bagels for breakfast and loving it. I plan to make these again but next time I think I will make them a touch smaller and make 16 bagels instead of with the dough. I also plan to change the cooking time and directions just a bit so the top doesn’t brown as much, but the taste and consistency of the dough is great. Fresh bagels. Yum. Yum.
