Everyone has heard of the grilled cheese sandwich. I’d wager that most people have had a grilled cheese sandwich. But what about a grilled almond butter sandwich? Now before I get into he details I must give credit where credit is due. The idea for grilled almond butter sandwiches came from a favorite lunch my grandma used to serve us kids. The grilled peanut butter sandwich. Grandma was on to something amazing. Toasted bread with warm gooey peanut butter. We all loved it. Scratch that we all love it to this day. Even Maddy loves it so I thought why not take a favorite a jazz it up a bit.The result is better than I could have imagined. This is a must make sandwich people. You make it the same as a grilled cheese but instead of sliced cheese in the middle you spread almond butter on both slices of bread and lay out a layer of sliced strawberries on the almond butter layer before sandwiching the bread together and toasting in in a small saute pan. The creamy almond butter, sweet strawberries and whole wheat bread make for a great combination not o mention a healthy lunch.
