I know there is some debate over whether chili should include beans or not. I personally believe beans should be included if for no other reason than I like beans. Our little family actually loves beans and while a chili without beans would get eaten I would probably get confused looks from my crew. Plus beans add great fiber and bulk up chili like nothing else all while being very inexpensive. Hooray for making a big pot of chili even bigger! So beans are a must around here. Also, corn bread is a must with chili around here. Obviously that has nothing to do with the beans or no beans debate but I just thought I would throw our need for hearty fresh out of the oven corn bread out there too.
Left over chili is also a welcome lunch for all of us. How do I send chili for school lunch? Well, it’s pretty simple really. For Madeline I warm her thermos with hot water and then heat the chili and send it to school in the warmed thermos. The chili stays warm until lunch time when she can add in whatever toppings I might send in her lunch box and enjoy.

- Meaty three bean chili
- Shredded cheddar cheese
- Whole wheat corn bread spread with butter and drizzled with honey
