I think the world of sweet potatoes. I love the color, the taste and the healthiness of them. For Madeline sweet potatoes are hit and miss. One day she likes them and the next she’s not a fan. I think a lot of it has to do with the way I serve them. One way she loves sweet potatoes is wrapped up in a burrito. Especially when she gets to make the burrito herself. Since she is in school she doesn’t get to make her own lunches all that often but when she does she loves it. In honor of National Cook a Sweet Potato Day tomorrow- I promise, it’s a real day– I have a little sweet potato kid lunch to share.
What’s on the plate: Sweet Potato and Black Bean Burrito
Whole wheat tortilla
Black beans (about 1/8 to 1/4 cup)
Boiled sweet potato chunks (about 1/4 cup)
Organic corn (about 1/8 cup)
Sharp cheddar cheese (about 1/8 to 1/4 cup)
