I often wonder what other people are eating. As I sit down to one of my mid-day to meals I can’t help but think about what other people might be munching. I love to see the plates of other’s, it inspires me to think creatively, try new things and helps point me in the right direction. So it dawned on me. Why not share what I’m eating? Maybe my lunch menu will come in handy for someone else. Lunch around here doesn’t just have to be about the kids right?
I’m sort of into salads right now. By sort of I mean very, of course. There are a few reasons for this salad love.
1. Salads are healthy. Well they can be if you don’t load them with bacon bits, cheese and creamy dressing as I used to do as a child when visiting salad buffets. I’m not proud of it, but it’s the truth I tell ya.
2. Salads are pretty filling when you make sure to top them with healthy toppings from several food groups.
3. Salads are quick and easy to make. I’m a busy lady. I have to keep meals during the day simple or I run out of time and then either eat junk or eat nothing. Neither of these options are optimal.
In honor of my love of a good crisp fall apple, salad and, my goal to whittle down my middle I present to you my current favorite salad.
Harvest Apple Salad
2 large handfuls baby spinach (about 2 cups)
1/2 Granny Smith apple, sliced or diced (it’s up to you!)
2 tablespoons dried cranberries
2 tablespoons roughly chopped walnuts
2 tablespoons blue cheese crumbles
1 tablespoons lemon juice (equal to the juice of 1/2 of a lemon)
1 teaspoon honey
Layer the apple, cranberries, walnuts and blue cheese over the spinach and drizzle lemon juice and honey over the top.
If your feeling extra hungry some sliced chicken would make a great addition.
Simple right? But oh so yummy! So this is one thing I am eating. Almost daily for the last week.
