From just a quick look through the refrigerator this week I was able to pull together a few leftovers to make something totally different. I’ve playing around in the kitchen lately making ranchero sauce for huevos rancheros so ranchero sauce was transformed into a pasta sauce for this lunch. With a few other leftovers mixed in a sort of south of the boarder pasta was born. These bowls of pasta were cleaned out by the time lunch was done and I had happy girls on my hands.
What’s on the plate: Ranchero Pasta
- Whole Wheat pasta shells, pinto beans, and corn tossed with ranchero sauce and topped with a little sprinkling of cheese.
